I've collaborated with Pam's Superfoods to produce this delicious breakfast recipe. I'm quite careful when asked to promote brands as they need to be products I actually like and would buy, this is certainly one of them. I am so pleased that these 'luxury' food products are now accessible and affordable for the every-day cook. I have used their Black Chia Seeds and Cacao Nibs to produce this easy weekday breakfast with two topping options.

I like to make a big bowl on Sunday night and have it as a quick and easy weekday breakfast. The bircher keeps for 3 days, make toppings fresh on the day.

BIRCHER MUESLI

Serves 4

INGREDIENTS

550ml almond milk or regular cows milk if you prefer
2 1/2 tablespoons Pams Black Chia Seeds
1 1/2 cups rolled oats
2 tablespoons brown sugar
Seeds of 1 vanilla pod
1/4 teaspoon of salt

METHOD

In a bowl, combine the milk, Pams Chia Seeds, rolled oats, brown sugar, seeds from the vanilla pod and salt. Once well mixed, cover and refrigerate overnight. 

CARAMELISED BANANAS, PECANS AND CACAO NIBS

INGREDIENTS

2 knobs of butter
3 bananas, sliced
1/4 teaspoon cinnamon
1 teaspoon brown sugar
50 grams pecan nuts
Pams Cacao Nibs, golden syrup and coconut flavoured yoghurt to serve

METHOD

Melt 1 knob of butter in a non-stick frypan over a medium heat. Add the sliced bananas and fry on both sides until golden. Remove from pan and set aside. Add the pecans to the pan and fry until toasted, add another small knob of butter and the teaspoon of brown sugar. Stir until sugar has dissolved and pecans are coated. Remove from pan and set aside. 

Divide bircher between bowls, add a dollop of coconut yoghurt, caramelised bananas, candied pecans and finish with cacao nibs and golden syrup. 

SPICED APPLE, PRUNE & ALMOND

INGREDIENTS

2 green apples, cut into matchsticks
12 prunes
1 teaspoon cinnamon
Coconut Yoghurt
Almonds, roasted
Honey and coconut flavoured yoghurt to serve

METHOD 

Add cinnamon to bircher and divide between bowls, add a dollop of coconut yoghurt, matchstick apples, prunes, roasted almonds and a drizzle of honey.
