CHOCOLATE & PEANUT BUTTER MAGIC ICE CREAM SHELL
As a kid I was totally obsessed with those sauces that harden within seconds of touching your ice cream. They are so easy to make at home and require very few ingredients. I’ve jazzed this one up a bit with peanut butter and sea salt.
This recipe is in collaboration with the lovely team at Killinchy Gold. Their Pure Vanilla Ice Cream is perfect with this crunchy chocolate shell.
250g good quality dark chocolate, roughly chopped
4 tablespoons coconut oil
2 tablespoons smooth peanut
100g roasted peanuts, chopped
Bring a large pot of water to a simmer.
Place dark chocolate, coconut oil and peanut butter in a large heat-proof bowl. Place bowl on top of simmering water, (make sure the base of the bowl isn’t touching the water) stir occasionally until melted.
Scoop ice cream into bowls or waffle cones, drizzle over sauce and finish with a pinch of sea salt.
