These cookies are the ultimate movie snack, combining salty, chewy popcorn and rich dark chocolate. Sneak a few of these in your bag next time you're heading to the cinemas. 

SALTED CARAMEL POPCORN &
CHOCOLATE CHIP COOKIES

Makes 18

INGREDIENTS

120 grams brown sugar
100 grams white sugar
100 grams butter, softened
1 teaspoon vanilla extract
1 egg
1 1/4 cups plain flour
1/2 teaspoon baking powder
1 teaspoon sea salt
2 cups of caramel popcorn
100 grams dark chocolate chopped into small cubes

METHOD

Preheat oven to 180°C on bake.

Place the sugar, softened butter & vanilla in the bowl of an electric mixer and beat until creamed. Alternative combine in a bowl and whisk until mixture is pale and creamy.

Add the egg and beat well. 

Add the flour, baking powder and salt and combine. 

Add the popcorn and chocolate and fold gently. 

Place cookie dough in the fridge and let chill for 30 or so minutes, this will help stop the cookies from spreading too much once cooked.

Roll into balls and slightly flatten, give a bit of room between each cookie because they can spread quite a bit. 

Bake for 15-20 mins.
