Creamy eggs served in croissants with champagne ham, peppery rocket and goats cheese. Really quick and easy and they taste delicious!
SCRAMBLED EGG CROISSANT WITH CHAMPAGNE HAM, ROCKET & GOATS CHEESE
Makes 4 filled croissants
Large knob of butter
300 grams good quality champagne ham
50 grams firm goats cheese
1 cup rocket leaves
Whisk eggs until whites and yolks are well combined.
In a large non-stick fry pan melt the butter over a low-medium heat. Add the whisked eggs and using a spatula gently fold the eggs until they're just about but not quite set. Then remove from the heat. Sprinkle over half the goats cheese and gently combine.
Serve in warm open croissants with ham, rocket, extra goats cheese, salt and pepper.
