These are ridiculously tasty and so quick and easy to make. I ate three of these before getting them onto the cooling rack! Rich fluffy bran muffins bursting with juicy sharp boysenberries and blueberries. These are great for lunches, pop them in the freezer and take them out as you need. 


Makes 12 regular sized muffins


1 cup standard flour
2 cups bran
3/4 cup raw sugar, plus a little to sprinkle on top
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/3 cup golden syrup
35g butter, melted
1 egg
1 cup milk
1/2 teaspoon baking soda
1/2 cup frozen blueberries
1 & 1/2 cups frozen boysenberries


Preheat oven to 180°C.

Grease muffin tin.

In a bowl, combine the flour, bran, sugar, baking powder and ground cinnamon. Add the melted butter, golden syrup, egg, milk and baking soda until well mixed. Gently fold in the boysenberries and blueberries. 

Spoon batter into muffin tin and sprinkle with raw sugar and bake for 25 minutes or until golden brown.
