This is a really easy recipe for delicious oaty chocolate chunk cookies with whatever nuts and seeds you have in your pantry. These cookies can be made healthier by reducing the brown sugar quantity by half. 

CHOCOLATE CHUNK & ANYTHING COOKIES

Makes 24 cookies

INGREDIENTS

125g butter
1 cup softened brown sugar
1 egg
1 teaspoon vanilla essence
3/4 cup of rolled oats
1/2 cup coconut threads
1 1/2 cups plain flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Extras:
1 cup chocolate chips
3/4 cup mixed nuts
2 Tablespoons chia seeds
2 tablespoons pumpkin seeds

METHOD

Preheat the oven to 180°C.

Cream butter and sugar until fluffy and pale. Add egg and vanilla essence and mix until combined.

Add the dry ingredients and mix until dough has come together.

Add the chocolate, nuts and seeds and mix together.

Roll into balls and place on a lined baking tray, refrigerate for 1 hour.

Bake for 8-12 minutes or until golden.
