GREEN SALAD WITH HERB & LEMON MAYO DRESSING

Everyone needs a simple green salad up their sleeve, I’ve jazzed this one up with a herb and lemon mayo and crunchy sourdough croutons. 

Serves 4-6

INGREDIENTS

2 slices sourdough, torn into small bite sized pieces
2 tablespoons olive oil
¼ teaspoon sea salt
1 iceberg lettuce, cut into wedges
1 avocado, sliced
½ cucumber, sliced
1 serving Herby Lemon & Mayo Dressing
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh dill
½ teaspoon lemon zest

METHOD

Heat the oven to 180ºC regular bake and line an oven tray with baking paper. Tear the sourdough up into bite sized pieces and place on the prepared tray. Drizzle over the olive oil and sea salt. Bake for 8-10 minutes until golden and crispy, toss half way through.

Cut the iceberg lettuce in half and then into wedges, lay out on a serving dish then top with avocado and cucumber. 

Drizzle over half the dressing and top with fresh herbs, lemon zest and cracked pepper.

HERB & LEMON MAYO DRESSING

This is a really delicious and versatile dressing, great on a crunchy green salad, with asparagus or roast potatoes, even used in burgers or wraps. 

Makes 300mls

INGREDIENTS

1 cup good quality mayonnaise
¼ cup olive oil
3 tablespoons lemon juice
1 clove garlic
¼ cup chopped fresh parsley
3 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill
Sea salt
Cracked pepper

METHOD

In a food processor or blender, blitz together the dressing ingredients. If you’re making the dressing to drizzle over salad, add 1-2 tablespoons of water and blitz again.
