Obsessing over these gooey cookie bars at the moment. Salty vanilla base dotted with dark and white chocolate and macadamia nuts. You could add any delicious crunchy treats to these bars eg, pretzels, corn flakes or peanuts!  

DOUBLE CHOCOLATE & MACADAMIA COOKIE BARS

Makes 16 small bars

INGREDIENTS

180g (3/4 cup) butter, melted
200g (1 cup) soft brown sugar
1 medium egg
1 teaspoon vanilla essence
150g (1 cup) flour
1/2 teaspoon baking powder
1/2 teaspoon salt
125g (around 3/4 cup) dark chocolate, chopped into chunks
125g (around 3/4 cup) white chocolate, chopped into chunks
70 grams (around 1/2 cup) macadamia nuts, roughly chopped
Sea salt to finish

METHOD

Preheat oven to 180ºC and line a deep dish brownie tin (mine is 25cm x 15cm) with baking paper.

Place melted butter and brown sugar in a bowl and mix until well combined. Add the egg and vanilla essence and continue mixing for 1 minute. 

Add the flour, baking powder and salt and continue to mix until well combined. Add most but not all of the chocolate and nuts and gently fold through. 

Pour into lined tin and sprinkle over remaining chocolate and nuts and bake for 25 minutes. Leave bars to cool completely in tin before cutting into squares and sprinkling over a pinch of sea salt. 

Tip: Bars are best eaten on the day but they're also delicious heated up in the microwave and served with a big scoop of vanilla or caramel ice cream!!
