This muesli slice is incredibly easy and versatile. Add any of your favourite fruits, nuts and seeds, just keep the proportions the same.
ANYTHING & EVERYTHING MUESLI SLICE
Makes 10 - 12 bars
120 grams butter, melted
1/2 cup plus 2 tablespoons of honey or rice malt syrup
1 cup dried fruit, I used a mixture of cranberries and blueberries
1 1/2 cups quick rolled oats
1/4 cup almonds or other nuts, finely chopped
1/4 dark chocolate chunks
1/4 cup pumpkin seeds
1 tablespoon sesame seeds, toasted
1/4 teaspoon salt
Preheat oven to 170ºC and line a 20 x 15cm brownie tin.
Place the butter and honey in a large heat-proof bowl and microwave for 1 minute or until melted. Add the remaining ingredients apart form the chocolate chunks and mix until well combined. Set aside to cool for 10 minutes before adding the chocolate chunks. (So they don't melt through the muesli).
Press firmly into lined brownie tin and bake for 20 - 30 minutes or until golden brown. Place the tin of muesli slice in the refrigerator and let firm up for 2 hours before cutting.
