MANGO, PASSIONFRUIT & COCONUT PARFAITS
1L Killinchy Gold Pure Vanilla Ice Cream
2 mangos, peeled and thinly sliced, stone discarded
2 bananas, sliced
5 passionfruit or 6 tablespoons passionfruit pulp
2 limes, juice of
6 medium sized meringues (roughly 8cm in diameter)
1/3 cup threaded coconut, toasted
In a large bowl, combine mango, banana, passionfruit pulp and lime juice.
Take six glasses and layer spoonfuls of tropical fruit, ice cream, crushed meringue and toasted coconut. Serve immediately.
