Savoury and sweet olive oil crackers with flecks of rosemary and orange zest. These are great on their own or with a soft and gooey cheese.
ROSEMARY, ORANGE & OLIVE OIL CRACKERS
1 1/2 cups of plain flour
2 teaspoons caster sugar
1 1/2 teaspoons salt
1 orange, zest only
1 tablespoon fresh chopped rosemary
1/3 cup water, add extra whilst kneading if need be
2 tablespoons extra virgin olive oil
Course sugar and salt for on top
Preheat oven to 220ºC.
In a large bowl, combine the flour, caster sugar, salt, orange zest and rosemary.
Add the water and olive oil and mix until well combined. Add a little extra water if required to bind ingredients. Knead until a soft dough forms.
Place dough on a large sheet of baking paper. Dust with flour and roll out until dough is around 2 - 3mm thick. Cut the dough into individual squares (don't worry about pulling apart each cracker) and transfer the crackers, whilst still on the baking paper, onto a baking tray.
Brush crackers with a little water and sprinkle over extra sugar and salt.
Bake for 15-20 minutes or until golden and crisp.
Leave to cool on a wire rack before snapping into individual crackers.
