SPICED WHITE CHOCOLATE, MACADAMIA & GINGER SLICE

A decadent no-bake slice which is easy to throw together and looks pretty fab!

INGREDIENTS

250g wine biscuits
1 cup macadamia nuts
⅔ cup desiccated coconut 
½ cup crystallised ginger
1 teaspoon ground cardamom
½ teaspoon ground cinnamon
½ teaspoon ground allspice
¾ cup of sweetened condensed milk
60 grams salted butter 
250 grams white chocolate
1 tablespoon coconut oil
2 tablespoons smooth biscoff spread

METHOD

Heat the oven to 180ºC regular bake. 

Place the wine biscuits in a food processor and blitz until the texture resembles sand. Place in a large bowl. 

Place the macadamia nuts on an oven tray and bake for 6-7 minutes or until lightly golden. Roughly chop then add to the bowl. 

Place the desiccated coconut on the tray and bake for 4-5 minutes or until golden. Add to the bowl along with the dried spices, sweetened condensed milk and melted butter. 

Line a 20cm square tin with baking paper and press the mixture into the tin. 

Place the chocolate and coconut oil in a heat-proof bowl and either in the microwave or over a pot of simmering water, melt the chocolate. 

Pour the melted chocolate over the base.

In a small bowl, briefly microwave the biscoff spread just to soften it slightly. Spoon the biscoff over the white chocolate and swirl with a spoon. Place in the fridge for a few hours to set before  cutting into small bite sized pieces.
