This loaf is so easy to make and perfect for weekday breakfasts or lunches. Nice and moist with gooey caramelised bananas on top! I like to cut it up and freeze it with bits of baking paper between each piece. 

BANANA, COCONUT & OAT LOAF

Makes 1 large loaf

INGREDIENTS

120g butter, melted
1/2 cup soft brown sugar
3 eggs
1 teaspoon vanilla essence
3 bananas, 2 mashed and 1 for on top
1/2 cup of rolled oats
1/2 cup coconut threads
1 1/4 cup plain flour
1/2 teaspoon baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
1/4 cup milk
1/2 teaspoon baking soda
 

METHOD

Preheat the oven to 160°C. Grease and line a loaf tin with baking paper.

Place melted butter and brown sugar in a large bowl and stir until sugar has dissolved. Add the eggs, vanilla essence and mashed banana and mix. Place the milk and baking soda in a bowl and stir until baking soda has dissolved. Add to banana mixture with dry ingredients and mix until well combined.

Pour batter into loaf tin. Slice the remaining banana in half lengthways and place on top of the loaf and sprinkle over whole oats. 

Bake in the oven for 1 hour or until skewer comes out clean.
