BANANA FRITTERS WITH CINNAMON & SUGAR

Sweet and gooey banana on the inside with a golden doughnut like crust on the outside. Make sure to use bananas that are very yellow or spotty, they are sweeter and have more flavour. Finger bananas are best!

INGREDIENTS

1 & 1/4 cup plain flour 
1 teaspoon baking powder
260mls milk
1 size 7 egg
1 teaspoon vanilla bean paste
1 pinch of salt
4 ripe/overripe bananas or 6-8 finger bananas, sliced on an angle
½ cup caster sugar
1 teaspoon ground cinnamon
Neutral oil for frying, such a canola or vegetable

METHOD

In a bowl, whisk together flour, baking powder, milk, egg, vanilla bean paste and salt. 

Heat 4cm of oil in a deep pan and line a baking tray with paper towels. 

In a bowl, stir together the caster sugar and cinnamon. 

Once the oil has reached 180ºC, dip the sliced banana into the batter and let any excess drip off. Carefully drop into the hot oil and fry until golden brown, flip over with a slotted spoon. Once golden brown, place on the lined tray then toss in the cinnamon sugar. 

Note: If you don’t have a thermometer, you can drop a little bit of the batter into the oil, if it immediately rises to the surface and bubbles then they’re ready to cook.
